If I recall correctly Kakuzu went through a number of partners before Hidan. Or maybe Konan threatened to buttfuck him with a big paper dildo. He probably joined because he wanted to avoid the mist hunter nins. There was also that other swords men of the mist, who's name I don't care to remember. Orochimaru joined because he wanted to get more information about Pain and his eyes, and because the Akatsuki has a surprisingly relaxed policy about fucking little boys. Sasori decided to go along with it because he wanted to make some cool new puppets out of his fellow Akatsuki members, and Deidara stayed because he secretly enjoyed getting eye fucked by Itachi. Though the robes are comfy.ĭeidara and Sasori were petty much forced to join. unfortunately it all gets spent on these silly robes and bribing spies. On the other side of things, you get to make lots of money. Sure you're a little bit safer with Hidan at your back, well maybe not, but he makes a good decoy, but you still have to put up with the obnoxious bastard. Some people get the sort end of the stick, like Kakuzu. Or even worse, you been reduced to a talking head and part time flesh light. Congratulations you've been reduced to a talking head. Sure you may kill off a few, but eventually they're going to cut of a limb or two and you'll be immobilized. You could be like Hidan, running around killing as you please, but one day you're going to run into a group of jonin and they're going to kill your ass. It's sort of a strength in numbers thing. Sasori is able to keep making human puppets, Orochimaru can do his human experiments, Deidara can kill people with his art, Kakuzu can hunt down bounties for the organization, etc. They're all criminals so they don't care what you do. Akatsuki, being a group of some of the most powerful rogue shinobi, offers protection and comfort of not having to worry as much of previously mentioned threats like bounty hunters or hunter nin while maintaining the freedom to keep pursuing your own goals as long as you do missions for the Akatsuki every now and then. 
Officials don't want to be caught hiring rogue shinobi, but Akatsuki can get work by villages under the radar. You'll need a lot of underground connections.
It's hard to find work as you can't get missions normally through the system like inside the village. Effectively, it'd be very hard for you to pursue your own motivations that led you to defect in the first place with all this going on. They're marked on the bingo book, shinobi of their defected village would likely try to kill you if they found you granted they aren't a squad of genins or something, you'd have a bounty on you, etc. Rogue nin are more vulnerable on their own.
